Kalbi BBQ with Kimchi Fried Rice

INGREDIENTS

 
4 strips of well-marbled beef ribs
 

Marinate:
1 c. brown sugar
1 c. soy sauce
¼ c. mirin
4 tbsp. minced garlic
2 tbsp. sesame oil
¼ c. ponzu sauce

Fried Rice Ingredients:
2 c. rice
1 c. kimchi
½ c. julienne carrots
½ c. thinly sliced green onions
2 eggs
¼ c. fish sauce
2 tbsp sugar
¼ c. light soy sauce
1 tbsp oil

RECIPE

combine all the marinate ingredients 24 hours ahead of time
marinate the beef ribs with the marinate and leave in the fridge overnight
preheat the bbq to high temperature prior to grilling
grill the beef ribs 3 minutes on each side depending on thickness
rest the ribs after grilling while preparing for fried rice
heat oil on a pan and saute carrots, green onions and kimchi
add in precooked rice, fish sauce, soy sauce, sugar and mix well together
stir in eggs just before rice is cooked
serve fried rice with beef ribs

#P&Y Tips:

keep tossing the rice gently over high heat so the rice does not clump up
