Lemon Thyme Roast Chicken


4 Chicken Drumsticks (thighs & legs)
1 lemon zest and juice
2 tbsp dried or fresh thyme
¼ c. olive oil
1 tbsp salt
2 tsp pepper
2 carrots
2 turnips
2 onions
2 potatoes


marinate the chicken drumsticks with the lemon zest & juice, thyme, oil, salt & pepper for about 2-4 hour
preheat oven to 355°F
dice carrots, turnips, onions and potatoes to thumb size to ensure even cooking
toss the diced vegetables and mix it with oil salt and pepper and place it on a baking tray
place the chicken drumsticks on top of the bed of vegetables
bake for 45 minutes and let it rest for about 10 minutes before serving
serve with a salad of your choice

#P&Y Tips:

when you have too much fresh herbs at home, don’t throw them out, put the herbs in oil of your choice so that you can have herb oil in your pantry!
