Tangy Red Cabbage Slaw


⅓ red cabbage, sliced thinly
1 apple, sliced thinly
2 carrots, grated
handful of cilantro, chopped finely
3 green onions, diced

half a carrots
knob of ginger, peeled
60ml apple cider vinegar
2 tbsp extra virgin olive oil
splash of orange juice
salt and pepper


diced the carrots and ginger to bite size pieces
blend the carrots, ginger, vinegar, oil, salt & pepper into a smooth vinaigrette
set dressing aside
chopped all vegetables for the slaw and put them into a big bowl
pour dressing onto the slaw just before eating

#P&Y Tips:

use any citrus fruit juice you wish, but I find orange and carrots pair very well together

make sure you only add the vinaigrette just before eating
