Whole Wheat Pita Wrap Pork Kofta

INGREDIENTS

300g minced pork
2 cloves of garlic
2 tsp of paprika
½ tsp cinnamon
1 tsp of cumin
1 tsp fennel seeds
salt & pepper
handful of parsley
¼ cucumber sliced
handful of salad green
2 pita wraps
½ c. of low fat natural yogurt
1 tsp harissa

RECIPE

preheat oven to 355°F
mix pork with parsley, paprika, cumin, cinnamon, salt and pepper
form meat mixture to 4 sausage shapes
pan fry the pork with some oil on a hot pan for 2 minutes on each side
put the kofta into the oven for 10 minutes after gaining some colour on each side
pour in coconut milk and add in desiccated coconut and mix well
mix yogurt and harissa as a dip
warm pita wraps and place salad green and cucumbers on one side of the pita, place 2 kofta sausages on the greens
dollop the yogurt on the sausages and fold the wrap
serve the wraps with extra yogurt

#P&Y Tips:

add different spices to the pork mixture for your own twist

if you don’t have harissa paste at home, mix the yogurt with a bit of hot sauce of your choice
